Harvesting

The realization of a high-quality product is a complex process where all the aspects of the processing chain must be observed, from how the live fish are maintained, to rapid and humane slaughtering and through to the subsequent chilling and processing steps.
                    

Many species of fish, including salmon, suffer from serious quality loss if stressed during the harvest process prior to slaughtering.  As a consequence Baader offers one of the most humane and efficient method for stunning and bleeding, utilizing percussive stunning and bleeding technology.
                   

Low stress harvesting ensures:

  • Higher flesh quality in the harvested fish reduces flesh gaping and blood spotting in filets.
  • Longer pre-rigor time - up to 20 hours
  • Up to 20 – 30% shelf-life improvement   
  • Improved processing efficiency by reducing wastage when fish are machine processed (gutting, heading, skinning and filleting)          

With the integration of Seafood Innovations into the Baader Group, a new business subsidiary was formed, BAADER SI. As a result, the previous “flagship” and industry standard, the SI7C combination stunner and bleeder, was morphed into the BAADER 101.

The BAADER 101 has been further developed as a central platform machine to handle a range of fish sizes and species. These machines are electronically controlled by a central PLC, which facilitates rapid changes of the electronic settings controlling the speed and adjustment of the machines to the size of the fish. Baader research and development ensures that the path of harvest excellence continues to evolve.

BAADER supplies a range of machines and supporting modules specifically suited to the harvesting requirements of the client. This includes everything from single stun/bleed units to advanced multi-channel systems incorporating automated fish delivery.

BAADER 101 Manual Feed System

There are several types of Manual Feed Systems available.
Achievable throughputs starting from 30 fish/min with one operator up to 240 fish/min with 8 operators.
Custom-solutions upon request.

BAADER 101 automated Swim-In System

The unique Baader SI, automated harvest system takes advantage of the fish’s natural behavior where they swim into the stun/bleed machines, with the absolute minimum of stress. 
Achievable throughputs ranging from 50 fish/min with 1-2 operators with a standard 4channel Swim-In-System.
With only a small increase in personnel higher capacities can be achieved with Multiple Systems / Custom-solutions.

is a key process in the provision of optimum fish quality and next stage fish processing.
